Course program and objectives:

The Brewing Foundation Course is a comprehensive introduction to the different methods of brewing coffee. This course is ideal for anyone who wants to learn how to brew high-quality coffee using a variety of devices and techniques. During the course, participants will learn:

  1. Coffee Knowledge:

    • Origins of coffee and main species used (Arabica and Robusta).

    • Sensory impact of different processing methods.

    • Importance of coffee freshness and ideal storage conditions.

  2. Infusion Methods and Equipment:

    • Introduction to the six basic extraction methods: boiling, gravity filtering, percolation, pressure, immersion, and vacuum.

    • Main features of coffee grinders and their importance for optimal extraction.

  3. Extraction Guidelines:

    • The seven essential elements of coffee extraction.

    • Importance of the ratio of coffee to water, and adjusting the grind to obtain the desired extraction.

    • Influence of brewing time, water temperature, and turbulence on extraction.

  4. Infusion Analysis:

    • How to describe the sensory characteristics of extracted coffee (color, aroma, taste and body).

    • Definition and calculation of the yield of soluble compounds and concentration of solubles to obtain a balanced coffee.

    • Using the Infusion Control Chart to ensure optimal infusion.

  5. Maintenance:

    • Importance of cleaning and maintenance of equipment to avoid contamination and ensure the quality of the infusion.


The course concludes with practical activities that consolidate the theoretical knowledge acquired, preparing participants for the intermediate level.
